Rice Cookies
with the biscuit maker.
The discovery of the biscuit maker is recent history, I liked straight away the forms that it could make, so I didn’t hesitate to buy one :-).
The beginning, as many of you may know, it was not an easy one, but with a little
commitment I found the right combination and I tried and make these rice based cookies.
Ingredients:
150 gr of rice flour
100 gr of margarine
50 gr if sugar
soymilk as needed
flavours, to taste
Method:
In a bowl, mix together margarine, sugar and flavorings (I used the usual lemon
essential oil, but could be vanilla powder, other oils, cinnamon, etc..). Mix with a
fork until the mixture gets creamy. I use a kind of margarine that is creamy itself.
You will get a mixture that is hard to roll up; at this point, add soy milk, but very
little at a time, as if you exaggerate the mixture will become too liquid and cookies
will come out too crisp; then add it what is necessary to obtain a workable dough.
At this point, shape the dough into a cylindrical shape, in order to fit it into the
biscuit maker, insert the “draw-plate” and “shoot” the cookies directly on the baking
tray, without baking paper, silicone or flour.
Bake in preheat oven at 180 degrees for 10-15 minutes; remove them from the oven anyway when they start turning brown.
