Catalan Millet


I bought these lovely oven dishes just for this purpose. The Catalan cream.
I “reworked” the recipe of the “Dressed Millet Pudding”: the consistency of that pudding is perfect for this preparation, I flavoured it completely changing its taste, but the result satisfied me:¬† it’s perfect.

500 ml of organic soya milk
60 gr of organic millet flour
2 tablespoons of brown sugar
1 tsp turmeric
cardamom, to taste

In a small saucepan combine millet flour, brown sugar, turmeric and cardamom. Mix with a whisk, pouring the soy milk very very slowly.
Simmer for about 15 min.
It must be quite a dense and thick pudding.
Pour it directly into the oven dishes and sprinkle the surface with brown sugar.
Before serving, just bake them au gratin in the oven, at 200 degrees for 10 minutes or so, you must obtain a fragrant crust.

The combination of turmeric and cardamom gives to this cream a unique aroma, delicious, gratifying.
You can prepare them in advance, keep them in the fridge without troubles. If already baked au gratin: just warm them slightly in the microwave. To be baked au gratin still: leave the last step to the moment you serve them. Personally, I prefer to bake au gratin all of them, to optimize the usage of the oven.
The oven dishes measure 8 x 8 cm.

    I know Catalan cream, and it isn’t one of my favourite desserts… but I could try this!

    Yep, I would also add cinnamon, but just because I’d use it everywhere :-P. Maybe it wouldn’t be a proper Catalan cream though…
