Vegetable Curry
Here it is a simple, quick and hearty curry… and some nice pictures at the end
Ingredients:
1 nice cauliflower
4-5 potatoes
green beans, to taste
1 onion
one or two cloves of garlic
1 green apple
a cup of cooked chickpeas
a can of coconut milk
1 tablespoon of olive oil
2.5 dl of veg broth
3-4 tablespoons of hot curry
Method:
Chop the cauliflower, dice the potatoes, clean the green beans and cut them into three pieces.
Chop onion and garlic, peel the apple and grate it coarsely.
In a wok, heat the oil with onion and garlic, add curry powder so that it gives off all its fragrance, then add the grated apple, cauliflower, green beans and potatoes. Cook a few minutes, stirring constantly. Pour in the broth and keep on cooking, covering with a lid for 15 minutes.
Add chickpeas and coconut milk and simmer for 5-10 minutes longer.
Serve it with a little bowl of soy yogurt to “turn off” the tongue if the curry is too spicy…
My little cat occasionally takes a break from his new role as a mother and dozes off somewhere for half an hour … generally she loves lying on a freshly laundered tablecloth!
