Sweet & Sour Seitan
Yet another version of sweet & sour seitan… I found out that I love cardamom and date syrup, that lately I’m using instead of sugar.
Ingredients:
a piece of seitan as big as a fist
2 small leeks
1 clove of garlic
umeboshi vinegar (any vinegar would do but I think this is really good)
1 teaspoon of pureed ginger
1 tablespoon of date syrup (or any sweet stuff, however the syrup is very sweet)
1cardamom pod, crushed, discard the green shel and ise the black bits
salt
mixed pepper
extra virgin olive oil
Method:
In a pan I stew the leeks, cut into thin slices. Halfway through the cooking I add the date syrup, the whole garlic, ginger, cardamom and I blend with a bit of vinegar (you decide the amount). After a minute or two, I add seitan, cut into cubes. I cook 5 minutes longer, then I serve, adding freshly mixed pepper and extra virgin olive oil. I must say that it is really good 🙂
This is pretty interesting, I’m curious of leeks+date syrup!
