Apple Hearts
These cookies are really delicious! Today I made a lot of them (and of other kinds as well) as an “encouragement” to my brother who studies at the university. I had never made them “vegan” style, but today I tried to remove butter and eggs from the recipe and they came out really good.
Ingredients:
120 gr of margarine
100 gr of sugar
1 tablespoon of potato starch and 2 of water (egg substitute)
220 gr of flour
1 teaspoon of vanilla extract
1 tablespoon of baking powder
2 golden apples
1 tablespoon of jam (optional)
cinnamon
icing sugar for dusting
Method:
With a fork, work margarine (100 grams) and sugar. Add a tablespoon of potato starch and two tablespoons of water, then flour, vanilla and baking powder.
Knead the pastry with your fingertips to get a soft dough, then wrap it with some cling film and let it rest in the fridge for 30 minutes.
Meanwhile, prepare the filling: peel the apples and remove their cores. Cut them into very small cubes and cook in a pan along with 20 grams of margarine, a sprinkling of cinnamon and jam.
Cook for about 10 minutes, and then let it cool.
Now, roll the dough out to a thickness of about 2 mm.
Cut “discs” of about 6 cm and place them on a lightly oiled baking tray.
On each “disc” place a heaping tablespoon of apples and cover it with another disc, slightly larger. Press the edges well.
Bake your cookies in preheated oven at 180°C for about 12/15 minutes.
Remove the cookies from the oven, once cool/warm dust them with icing sugar and serve.

I remember them, they were pretty famous when I was a kid, they were too sweet and I didn’t particularly like them, but the good thing of home making is that you can choose the amount f ingredients!
