Pasta with Artichokes Cream

I admit, these days I’m nuts about smoked tofu, sooner or later I’ll put it even in desserts! : O)

This recipe has many variations, this is my favourite one …

whole grain short pasta
1 artichoke with stalk each person + 1 for decoration
soy cream
¼ clove garlic
smoked tofu
extra virgin olive oil
salt, pepper

Steam the artichokes, then put the inner part of the stalks and the hearts, without the “beard”, in a blender, add cream, soy, garlic, salt, pepper and process for a while. Meanwhile cook the artichoke you’ll use as decoration, sliced, in a small saucepan, with olive oil, salt, garlic and parsley.
Cook pasta, drain and place it in a bowl; add olive oil and cream of artichokes, stir, then add the artichoke slices, a nice sprinkling of smoked tofu … and enjoy!

    Delicious!! I always forget artichokes, and I’m always a sort of discouraged as they’re so boring to clean…but this is really yummy!
    And your cat must know it very well 😛
