Pizza with Nuts


I got the inspiration for this pizza from a local bakery, which does, in fact, a pizza with walnuts that sometimes I buy just because I’m gluttonous… but is oily and greasy, plus made with oils of uncertain origin (oils for bike hub, my mom would say).

So I decided to replicate it using wholesome ingredients and…came out excellent! Given the many failures with the preparation of I am particularly proud of this!

200 gr of manitoba flour (very strong Canadian flour)
50 gr of whole rye flour
50 gr of whole wheat flour
50 gr of type 00 flour (I had to finish the packages ­čśë )
about 200 ml of warm water
2 tablespoons of extra virgin olive oil, plus a little for brushing the surface
2 teaspoons of sea salt, plus one for garnish
1 teaspoon of sugar
1 packet of brewer’s yeast
1-2 teaspoons of dried extract of sourdough
some walnuts
some hazelnuts
a few leaves of sage

I used the bread machine for the dough and the rising, but obviously you can well knead by hand. In my case I inserted first the liquid ingredients (water and oil) and then dried ones, the last ones being yeast and extract of sourdough. While the machine was kneadeing I shelled and chopped nuts and I added them in the basket (the program was about halfway through).
I let it rise about 3 hours, “deflating” the dough by hand when it was halfway through the rising, then I rolled it out, seasoned with salt, olive oil and sage and baked at 250┬░C for 15 about min on the stone for pizza. It took all my willpower not to finish it while it was hot!
