Orange Risotto

We prepared this risotto last night, me and 3 other friends. When we found the recipe on the Internet (“omnivorous” version), I was immediately intrigued!
I post this recipe after a long absence … of course I haven’t stopped cooking all this time, but I was very busy with many things.
Here it is the recipe, vegan and simplified version! Accessible even to those who must cook in a simple kitchen, not equipped at all!
Ingredients:
(serves 4)
350 of rice. We’re in France, so we used Camargue rice
1 large orange
onion (I had a huge one … we used 3/4 of it)
herbes de Provence
oil
salt
broth (if you’ve got any), otherwise water
Method:
Remove the orange part of the orange peel with a vegetable peeler or a knife, and cut it into very thin sticks. Blanch it for a few minutes in water. We forgot this step, and we perceived a little the bitter of the orange…
Meanwhile, squeeze the orange juice and set it aside.
Slice the onion and fry it in a frying pan.
Add the rice and toast it a few minutes. Now, add the zest and orange juice.
Add salt and then cook the rice, by adding boiling water (or broth) as the rice absorbs it, until it’s done.
Towards the end, add a little herbes de Provence.
We scoffed it with gusto! It’s particular, but so good!
