Advent Cookies
This is the “veganization” of an italian traditional recipe (today I had to find a pretext to turn the oven on…it freezes!). The original shape is more or less that of “cantuccini”, but I preferred to use my Christmas moulds…. excellent at breakfast (but avoid proposing them to those who wear dentures) 😛
Ingredients:
(in small yoghurt pots, provincial version of cups):
two pots of coarsely chopped walnuts, more or less *
a pot of cane sugar
half a pot of malt
a pot of cream or soy yogurt (or half and half)
three pots of whole wheat flour
cream of tartar
vanilla, cocoa, ginger, orange peel dried and minced: optional
* note: it would be better to buy organic walnuts, it’s just completely different … just have a look at them!
Method:
Combine cream of tartar with the cream/yoghurt: then add the remaining ingredients. Divide the dough into 4 parts and flavour each of them with a different spice. Then, let the “balls” stand for half an hour. Roll them out and cut out shapes with cookie moulds. Bake at 150°C for half an hour.
