Crusty Chickpea Roll


Yesterday I started browsing through all the cookbooks I have at home, looking for some ideas, and I found this roll, which I had done only once … the original recipe was slightly different, there was corn, only walnuts, and even 150 grams of bread crumbs, which I thought unnecessary, and then a cherry based sauce that I haven’t done. Well, I twisted it a bit, but that’s the beauty of cooking, and then I thought the result was very good 🙂

(makes 1 roll)
500 gr of chickpeas (the dry ones, weighed after being boiled in a pressure cooker)
approximately 200 gr of mushrooms
100 gr of walnuts and cashew nuts
coriander, turmeric
salt, pepper
vegan puff pastry

I first cooked the chickpeas, I drained and chopped them together with nuts. I fried the onion and garlic, added spices and I then mushrooms, thinly sliced; I added marsala and, once done, I combined them with pureed chickpea. A good stir and the roll is ready. I gave it the shape of a sausage, and once cold, I wrapped it with vegan puff pastry. Straight in the oven at 20o degrees for twenty minutes and it is ready! Unfortunately, the puff pastry was one of those readymade, next time I will try a homemade one…perhaps even bread dough!?

    My Mum uses to do something similar with lentils, rather than chickpeas, for New Year’s Day… to wish good luck, as lentil are supposed to bring money 🙂
