Savoy Cabbage & Pomegranate Salad


“light before Christmas” ๐Ÿ˜‰

These days I’m trying to eat a little lighter, in anticipation of the upcoming binges, and this cheerful salad really satisfied me! ๐Ÿ™‚

(serves 1)
quarter of the savoy cabbage
3 tablespoons of pomegranate seeds
1 tablespoon of raisins
3-4 radishes
1/2 red apple
extra virgin olive oil
balsamic vinegar
salt and pepper

Elementary: we first soak the raisins for 15 minutes. Remove the seeds from the pomegranate. Wash, dry and cut the cabbage into strips. Slice radishes.
We start placing the salad in the plates, squeeze the raisins and add them to the rest.
Last thing, we cut the apple into small pieces and combine it to the other ingredients.
Create an emulsion of olive oil, balsamic vinegar, salt and pepper. Dress the salad and serve.

Nothing too earth-shattering, but a way to stay light with gusto!
Of course, only if you love the sweet and sour combinations … ๐Ÿ™‚

    This is truly good for New Year’s Eve as well! Pomegranate seeds are believed to bring good luck, as every kind of grain… also lentils for instance
