Here it is another ethnic recipe, a successful reproduction of the rice I always have at the Indian restaurant.

Ingredients:
(serves 2)
2 cups of basmati rice
1 onion
1 yellow pepper
1 courgette
1 small carrot
2-3 mushrooms
a handful of peas
2-3 tablespoons of corn
a slice of pineapple cut into small cubes
mix of peanuts, walnuts, pine nuts, pistachios
coriander seeds, chopped
1-2 cardamom seeds (only the inner bits)
garam masala (or a different mix of Indian spices)
curry
salt and pepper
seeds oil

Method:
Cut carrot and onion into strips and other vegetables into small pieces.
Pour a little seeds oil in a saucepan and sauté the vegetables with spices, salt and pepper.
Halfway through cooking add peanuts and pistachios, halved, chopped nuts and whole pine nuts.
Meanwhile, cook the rice (1 cup of basmati and two of water) for 10-12 minutes (always best to follow the time specified on the package) and once done, pour it into the pan with the vegetables. Season with salt and curry and cook for a minute longer. That’s it! 🙂
