Our Christmas cake, the alternative to the classic Pandoro

The base of this cake can be subject of many variations. It has a full-bodied consistency, soft but crumbly. Very good!

Ingredients:
100 gr of rice flour
100 gr of millet flour
50 gr of tapioca
50 gr of cane sugar
50 gr of chopped walnuts
70 gr of chopped organic dark chocolate (preferably a good quality one)
150 gr of Concita’s ricotta cheese
100 ml of sparkling water
200 ml of soy milk
baking powder

Method:
Before preparing the cake, it’s necessary to prepare the ricotta cheese; this is to be done least 24 hours in advance.
Combine all the dry ingredients in a large bowl, add baking powder, ricotta, walnuts and chocolate, both chopped.
Mix everything and start dilute the mixture, first with soy milk, then with sparkling water, you may need less than specified: it greatly depends on the density of flour and ricotta.
Bake at 180°C for 35-40 min (toothpick test).
If desired, decorate with icing sugar. I do not like icing sugar, I use it rarely, I used just to enhance the cake, it deserves a nice dress, considering the excellent content!

This year I did not want to prepare and eat panettone & c., we spent Christmas Day without big celebrations, but still I wanted to prepare a cake, tasty but, all in all, light. It reminds his older brother “Pandoro” only for its shape, it is completely different and gluten free.
I used a pudding mold (suitable for baking), top diam 20 cm, bottom diam 8 cm, height 9 cm (alternatively, use the 18 cm diam mold).
The cake remains slightly moist, with a chocolaty taste. Part of the chocolate melts while baking, but some pieces remain intact; which, combined with walnuts, give an excellent feeling of delicacy and elegant tastiness.

    I think this is great! I used to like pandoro, but I have to say, I don’t miss it that much…But your “alternative” sounds so yummy!!!
    And I want to point out that it’s also gluten free 🙂
