This is how I make my homemade soy milk…

Ingredients:
(makes 2 litres of soy milk)
200 grams of yellow soybean
2 liters of water  +1 / 2 for okara

Method:
Soak soy beans for 10 hours. Discard the soaking water. Heat 2 litres of water and bring it near to the boiling point. Purée the soy adding water taken from the pot. Put the cream you obtained in the pot. Let it simmer for 15 minutes, stirring.
Turn the heat off and let it stand for 15 minutes. Then, let’s start with the okara-milking, as I call it. Separate the milk from the okara … and here it is, your milk’s ready.
Guys, I also wanted to add that I usually prepare 5l of soya milk: with 2l I make tofu, with
2l i make ricotta cheese and I use the remaining litre for cooking purposes, such as creams, bechamel sauces, mayonnaise…

    This is definitely interesting and helpful… we do love soy milk, and this recipe is soo good! Also as I don’t make tofu (I can’t find nigari here…), I never tasted okara, while with this I can get it and finally taste it 🙂
    I was wondering… is anyone here living in the UK who can find okara?? I’ve been told that it’s not allowed anymore and that it’s almost illegal to sell it!!
