Pistachios & Apricots Cookies
Ingredients:
75 gr of margarine
50 gr of sugar
1/2 sachet vanilla sugar
a pinch of salt
125 gr of flour
25 gr of unsalted pistachios
1.5 tbsp of apricot jam
1/2 teaspoon of water
35 gr of icing sugar
silvered sugar pearls
Method:
In a bowl, mix margarine, sugar, vanilla sugar and pinch of salt. Then add flour and ground pistachios.
Roll out the dough (about 4 mm) and bake in middle of preheated oven at 200C for about 8-9 minutes.
Remove from oven and let the cookies cool. Meanwhile, combine the apricot jam with icing sugar and water. Spread this mixture over a biscuit and cover with another cookie of the same size/shape.
As a decoration, with a pastry bag put a drop of the mixture over the biscuit and add a silvered sugar pearl.
