Chickpeas Tortilla
Hello everyone! I haven’t been posting anything for a long time, but today I felt like cooking.
What I propose is a simple recipe: a improvised mix of chickpea flour and Spanish tortillas 🙂
Ingredients:
50 gr of chickpea flour
5 medium-small potatoes
2 tablespoons extra virgin olive oil
water as needed
salt and pepper
Method:
Prepare the batter with chickpea flour and warm water. It should be quite liquid. Let it sit for a few hours (minimum half hour).
Peel the potatoes and cut them into julienne style strips, or grate them with a grater (use the large holes).
Combine potatoes with batter, add oil, salt and pepper to taste.
Turn the oven up to the maximum (min comes up to 240°C) and while it’s heating, pour the mixture in a baking pan covered with baking paper and level it, so that it will be even, half a centimeter high.
Put it in the oven and bake until the surface gets golden, it will take about half an hour.
At the end, sprinkle it with a little of freshly ground pepper, if you like add a little oil and gnammm …: P
Surely it is very good even cold, in fact I’m bringing it at work for tomorrow’s lunch!

This looks so yummy! I would also add some dried tomatoes and herbs to flavour. Also, I’d make thicker…otherwise is just a nice idea!
