Onion Focaccia
To be done only if you’re not going to kiss anyone for the next 10 days 😉
Ingredients:
300g of semi-whole wheat flour (type 2)
20gr of sour dough
20ml of extra virgin olive oil
165ml of water
7g of whole salt
4g of fresh yeast
5 grams of brown sugar
for the filling:
2 medium onions
1 tablespoon of extra virgin olive oil
1 tablespoon of water
unrefined salt as needed
Method:
Dissolve boths yeasts in water with a teaspoon of raw sugar cane. Then pour them into the center of the well of flour, add the salt and knead for 10 min. Place the dough in a container, seal with a plastic wrap and let it rise for 90 min. In a greased baking tray, 35 x 20cm, roll the leavened dough out and leave it in a warm place for 2 hours, always wrapping it with plastic wrap. Before baking, prepare in the emulsion (1 teaspoon oil, 1 tablespoon of water) a glass, brush the surface, make some holes with your knuckles and add unrefined salt and sliced onions. Bake for 25 min. at 200°C (in any case, until it is lightly browned).
