Green Tea & Green Azuki Rice

Guys, I’m behind with recipes… and today I’ve got a bit of time!

(serves 2 or 3 if less hungry)
200 gr of basmati rice
100 gr of dried green azuki (soaked for half an hour)
about 500 ml of water (I put half a cup more)
2 (better 3) bags of green tea

First, I cooked azuki beans in a pressure cooker with water and of course without salt, as I didn’t know how long they have to be cooked. I cooked them 15 minutes, but it’s far too long! Better 10 min, my azuki were almost mushy.
Boil some water and brew green tea for 5-10 minutes, depending on how you want it strong. Mine was very light, with two sachets for 5 minutes … the next time I put 3 🙂
Once the tea is done, bring the water to a boil again, add salt (a little) and rice. Cook until the tea is absorbed, I did eight minutes with a pressure cooker and it came out perfect.
Add the azuki beans and stir in a tablespoon of extra virgin olive oil. Add salt if necessary.
Peculiar and good 🙂
The next time I’ll cook azuki beans with rice! 🙂

Very Japanese!!! Never found green azuki, I find only mung beans. Anyway, I could try this with mung or red azuki. Sounds interesting!
