Bread Pudding
Here it is another experiment with stale bread. In this case, I felt like having a very sweet and delicious pudding. The following is the simple preparation of this pudding-cake.
Ingredients:
stale bread, the kind you prefer, I had an unsalted semi-wholegrain one
oat or rice milk
brown sugar (optional)
rice malt as needed
extra virgin olive oil or margarine, to grease the pan
1/2 yellow apple to decorate
jam, to taste (mine: nectarines, home made)
chopped nuts to taste
Method:
Soak the bread in milk and sugar to taste. Squeeze it very well with the usual method of the plate in a in colander and mix it in a blender (to make it creamy). Add nuts and malt to the bread based mixture in the mixer. Half of this thick mixture will be poured in a baking pan, greased with margarine (or baking paper): make layer 2 cm thick and then add plenty of peach jam …
then add the other half of the mixture. Decorate the surface as desired, sprinkle with sugar and bake for 30-40 minutes. Remove from oven and let the cake cool before serving it in slices.
