Creamy Kohlrabi Soup

Here it is a tasty recipe for those who find kohlrabi.

Ingredients:
(serves 2)
300 gr of kohlrabi
250 gr of potatoes
6 vegan miniwurstels or 2 normal size vegan sausages
1 tablespoon of flour
50 ml vegetable cream
salt and pepper as needed
nutmeg

Method:
Peel and cut potatoes and kohlrabi into chunks, slice the sausages. Place them in pot with 3/4 of a liter of water (a little more if you prefer a more liquid soup), add salt and let it simmer for about 20 minutes from boiling  (use as a measure the potatoes, when they’re ready, then also the kohlrabi will be).
Now, dissolve the flour in the vegetable cream and add the nutmeg. Pour it in the soup, while still on the heat, and simmer until it gets very thick. The soup is ready, just serve it with a sprinkling of pepper and, if I had it, I would have add also a bit of minced parsley.

Comment:
Sopus are widely used in German cuisine, and can be even a main dish, by adding the usual sausages! Infact, this is a soup that me and my partner had as a main course for dinner, with just a little crusty bread to accompany its “creaminess”. Try it, I highly recommend it, even if you can’t find kohlrabi, you can do it just with potatoes or cauliflower … well, we veg have a lot of immagination!

    I see kohlrabi sometimes (actually I had to search it on the internet to understand what it was!), but I never tried it. You sort of opened me a world!

    Seems so good! I see kohlrabi at the market (never at the super though), next time I know what I can do with it. I’m thinking about making this soup with Jerusalem artichokes. I mean, I like the ideaof adding flour to thicken it and miniwirstel or sausages. Thanks for sharing 🙂
