Nuts & Dried Fruit Plumcake
… oil and sugar free! revision of a hazelnut cake I found here.
Ingredients:
120 gr wholemeal flour
100 gr of spelt flour
100 gr buckwheat flour
100 gr of hazelnuts, macadamia nuts and cashew nuts, ground to flour
1 pinch of salt
1 teaspoon baking soda
baking powder
apple juice as needed
dates, prunes and raisins cut into small pieces
poppy seeds (optional)
Method:
Very simple! Mix all dry the ingredients, except for baking powder and baking soda, that you’ll add as last ones. Then add the chopped fruit and apple juice. It shouldn’t be liquid. In fact, you will probably be able to work it with your hands. Transfer it into the mold, previously oiled, add some poppy seeds above it and in the oven at 180 degrees for 25-30 minutes. Great for breakfast! Sugar free, but all the dried fruit makes an excellent job as a sweetener!
