Vegetables Croquettes
Yesterday I had some steamed potatoes and spinachws and did not know what to do with them, so I decided for these vegetables croquettes…it’s nothing special … hope there aren’t similar recipes already …
Ingredients:
potatoes
spinaches
carrots
peas
onion
mint
parsley
garlic
1 tablespoon of starch
chickpea flour
bread crumbs
oil for frying
salt, pepper, nutmeg
Method:
Steam cook potatoes and spinaches. Apart, in a pan, sautée the chopped onion with diced carrots and peas. Squeeze and chop the spinaches, place them in a bowl with mashed potatoes, sautéed vegetables, starch, a little minced garlic, mint, parsley, pepper, nutmeg and salt. Should be quite a firm mixture. Form some croquettes and pass them first in a batter made of chickpea flour, then in breadcrumbs. Fry in the hot oil.
Chickpea flour based batter is more tasty and the coating comes out nice and crusty … This is the inside.
