Fennel & Celeriac Creamy Soup
Hi there! I haven’t been posting anything for a while, but I’m still around :-). This is a very simple one, born very quickly and using what I had in the fridge. some evenings ago. I don’t like fennel that much, buth I had bought it and I had to eat it somehow…It was delicious! Delicate but with a distinctive flavour, very thick as we like it.
Ingredients:
1/2 fennel
celeriac, I guess it was about 100/150 gr
1/8 apple
miso
extra virgin olive oil
coriander
water (or veg broth)
nutmeg
a pinch on cinnamon (to taste)
Method:
Chop the vegetables and the apple and place them in a pan. Add a little water (enough to avoid them to get stuck to the pan), and, if you wish, a little olive oil. Also, add some miso (to taste) and a pinch of cinnamon. Turn the fire on and sautée them very quickly. Let them go for about 2 minutes. Now add some water or vegetable broth, better if they’re hot. I use the microwave for this purpose…The quantity of liquid you need depends, of course, on the thicnkess you want to achieve. We like it very dense. So, just a little water for us! Let it cook until celeriac and fennel are done and purée it with a hand blender. Serve it still hot, garnishing with a coriander leaf, nutmeg and, if you like, a drizzle of olive oil.
It was so heartwarming! The apple gives it quite a fresh taste, but, for my palate, without adding any sweetness. Of course, to make it more creamy and hearty, you may want to use some veg cream or milk.
