Tofu & Pear Muffins
Good morning everyone! I woke up at dawn (it was 4.30) for no reason, and I decided to get myself in the kitchen. There’s nothing better than prepare breakfast for all the family, and then: muffins! Original recipe “veganized”, plus some autonomous additions. Then you really need a cuddle when you spend the whole day in front of a PC, while the sky is completely blue 😀
Ingredients:
100gr of rice flour
60gr of cake flour
100gr of tofu
70gr of sugar
25gr of corn oil seeds
1 pear
1 cup of rice milk (or less)
1 teaspoon of vanilla extract
1 teaspoon of baking powder
a pinch of baking soda
a pinch of salt
a pinch of cinnamon
Method:
In a bowl, blend tofu and sugar, then add oil and milk. Apart, sift the flours, baking soda and salt. Combine the solid mixture to the liquid one, and continue stirring. Meanwhile, purée the pear with a hint of cinnamon. Oil the muffin mold and turn the oven on to 180°C. Pour the baking powder in the mixture and amalgamate. Now, pour the mixture into the molds for 3/4 of them, and add a teaspoon of pureed pear on top (maybe it was better if I tucked it inside!). Bake for 25 minutes.
