Banana Strudel

Bananas too ripe, forgotten, brown, unpresentable … what to do with them? It’s a dilemma that winds quite often in the pages of this blog, so I suggest you one of my solutions!

vegan puff pastry (filo pastry)
ripe bananas
some dates
lemon juice (optional)
dark chocolate and / or powdered sugar for garnish (optional)

Preheat the oven to 180 degrees. Peel the bananas and cut them into slices or chunks; if you wish, sprinkle them with lemon juice, to prevent getting brown. Remove stones from dates and chop them, also coarsely chop some walnuts and mix them with bananas. Roll the vegan pastry out, sprinkle with bread crumbs and place the filling of bananas, dates and walnuts over. Form the strudel and bake it for about 30 minutes, until it’s golden brown. Remove it from the oven, let it cool and decorate as desired.

With the same filling I also did these nice “pillows”.

    This is really smart, I find that bananas go very well with walnuts. It’s necessary to pay attention to the kind of pastry you use though, as it’s not that simple to find a vegan one. This strudel is delicious :-D!
