Pasta with Cauliflower & …


… Macadamia Nuts
Macadamia nuts have something magical for their texture and their flavor, so I wanted to replace hazelnuts, which traditionally go with cauliflower,with them, with results that I found interesting …
And here’s the recipe:

a small cauliflower
a cup of macadamia nuts (preferably unsalted, so you can better adjust the flavour)
short pasta
a hint of garlic
soy (or oat) cream
poppy seeds
extra virgin olive oil
salt, pepper

Steam cauliflower.

Then cut it and place it in a bowl, with all its florets.

In the photo, my assistant cook, who supervises the works :-).
The inner part of the stem and and the sprigs of the flowers will go in the blender with soy cream, macadamia nuts, garlic, salt and pepper.
When the pasta is done, add it to the florets, seasoned with a bit of oil, and to macadamia nuts cream; a sprinkling of poppy seeds and straight on the table!
