Spiced Nana Muffins
I made these muffins for my flatmate, who in two months of flatshare has been eating only bananas, spices and muffins … therefore, these should be the perfect sweets for her …
Ingredients:
(makes 6 muffins)
1 ripe banana
70 gr of flour
30 gr of cornstarch
soy milk as needed
70 gr of cane sugar
50 gr of corn oil
1 tablespoon of baking powder
2 teaspoons of cinnamon
a pinch of cardamom
a pinch of cloves, reduced to power
a pinch of nutmeg
1 teaspoon of vanilla extract
Method:
Mash the banana with a fork, or purée it with a blender, and mix it with three spoonfuls of milk, sugar, oil and spices. Combine flour with starch and add them to the rest, a bit at at a time. If necessary, add bit of milk… at the end, add the baking powder. Bake for 25min at 170°C (depending on oven).
