Coloured Heart
Ingredients:
70 gr of basmati rice or other rice
1/2 yellow pepper and 1/2 red or green, at will
1/2 small onion
a little of white wine
parsley
1 tablespoon of olive oil
1 knob of margarine
salt and pepper
saffron
vegetable broth
Method:
Doses are for one person.
Prepare the broth in a pot. Meanwhile, in an another pan, sauté onion in oil over medium heat and when it turns yellow add the peppers, cut into small cubes, for 2 minutes. Add the rice, and after a minute, when it pops, pour in a little white wine.
Now, add the broth and pour it a bit each time the rice gets dry.
Cook for about 13 minutes, remove from the fire and add a pat of margarine, a pinch of saffron, a little parsley, salt and pepper. Let it stand for 2 minutes and serve on its own or, for instance, with herb tofu sausages.
