Red Sauerkraut
Holaaa! A few days ago I got the brilliant idea to buy a red cabbage the size of a bowling ball and I decided to make a ton of sauerkraut, I had never tasted it and I immediately fell in love with it! Here in Spain they call it Col Lombardo and this is the recipe (directly from Austria) …
Ingredients:
1 red cabbage
1 onion
2 apples
50 gr of cane sugar
vinegar
white wine
water as needed
salt
extra virgin olive oil
cumin
2 tablespoons of flour
Method:
Slice the onion, cut the cabbage into very thin slices, peel and cut the apple. Fry the onion with oil, add sugar and let it brown, add sauerkraut, apples, salt and a pinch of cumin, mix well and moisten with water and wine. Cover with a lid and let it cook over low heat, when sauerkraut is done add flour and vinegar. Keep on cooking and check salt and vinegar… it must be sweet and sour.
And that’s it!
I now I have a kilo of it…Thank goodness it’s irresistibly good 😛

My Mum did them for the first time at Christmas! She also added some raisins. They were so good!!!
