Wintry Fruit Tart
Hello! Sometimes I turn up, I always read you, I got lost a little bit with all these recipes! There’s a lot of them now 🙂
I mad ethis cake for an afternoon with friends, doses are for about six 🙂
Ingredients:
for the base:
100 gr of flour
25 gr of cornstarch
60 gr of cane sugar
30 ml of corn oil or sunflower oil
40 ml of water
a pinch of salt
¼ teaspoon cinnamon
grated rind of a quarter of a lemon
¼ packet of cream of tartar
for the custarrd:
65 gr of cane sugar
16 gr of flour
32 gr of cornstarch
60 ml of water
315 ml of soy milk
¾ grated of lemon zest
Method:
For the base:
Gather all the dry ingredients in a bowl: flour, cornstarch, cane sugar, cream of tartar, lemon zest, salt and cinnamon. Mix warm water with oil and add them to the dry ingredients. Mix well, forming a ball with the dough. Eventually, you’ll get a smooth dough, soft and elastic. Wrap it with a cling film and let it rest for 30 minutes. Then, roll the dough out in a tart tin, prick the dough and bake it for about 20 minutes at 180°C.
For the custard:
In a saucepan, combine flour, sugar, cornstarch and water and place it on a heat, stirring with a whisk until sugar has dissolved. Set it aside. Heat soy milk and add it to mixture made of flour and sugar. Place it again over a medium-low heat and stir until you reach the desired consistency. At the end, add the lemon zest and turmeric to give colour (optional)
Once the base has cooled, fill it with the custard and garnish as desired with fresh fruit!
