Seitan Ragoût Sauce
Here it is a very simple seitan based ragoût sauce, that you can use with any kind of pasta, even with lasagne (soon I’ll post the experiment).
I always prepare a lot of it: I use a whole bottle of tomato sauce and a big chunk of seitan, about a 150gr. You can also add celery and paprika, if desired.
Ingredients:
onion
carrot
oil
tomato sauce
seitan
two bay leaves
salt
sugar
Method:
Fry the onion and the finely chopped carrot in olive oil. Once golden, add the seitan chopped into small pieces, the smaller the better.
Then, pour the tomato sauce, add two abundant pinches of sugar and one of salt, add bay and simmer for about twenty minutes, stirring often. Also, sprinkling of nutritional yeast would go well, but is a bit to taste.
