Five Cereals with Yogurt
and sauteed vegetables.
Ingredients:
(serves 2)
1 small fennel
2 carrots
2 tablespoons of soy sauce
180-200 grams of cereals (oats, rice, wheat, barley and spelt, parboiled in my case)
1 soy yogurt, unflavoured
1 teaspoon of lemon juice
1 teaspoon of lemon zest
1 tablespoon of chopped chives
1 sprinkling of pepper
1/2 teaspoon of mustard
2 tablespoons of extra virgin olive oil
Method:
While grains are boiling, stir-fry for 2 or 3 minutes the vegetables, cut into strips with soy sauce.
Prepare the sauce by mixing yogurt with lemon juice, mustard, chives and pepper.
Drain the grain and serve them with vegetables, the sauce and sprinkled with a little olive oil to finish.

In the summer, I would have replaced fennel with courgettes, but all in all it’s not bad!
