Strawberry Heart

I post this quick and romantic sweet treat that I made for my love on Valentine’s Day: a little heart with strawberry yogurt ice cream.

To make ice cream, I used my brand new ice cream machine, which is already giving me so much satisfaction! 🙂

If you haven’t got it, I think you can just blend the ingredients, taking care to incorporate air and then freeze it…

260 gr of strawberry soy yogurt
50 gr of sugar
200 ml of rice milk
the tip of a teaspoon of carob flour
ten vegan wholemeal biscuits
a teaspoon of rum

In a bowl mix yogurt, sugar, milk and carob flour and stir well with a whisk to dissolve any lumps.
Place the mixture into the ice cream machine and operate.
Wait until ready:-)
With these doses, we had half of it as a mid afternoon snack :-). With the other half we made the sweet.
Crumble the cookies (I used some fairly neutral biscuits that I usually have for breakfast: whole wheat flour, brown sugar and extra virgin olive oil), add a teaspoon of rum and a bit of water to achieve a workable consistency.
If you have a small  heart-shaped cake pan or similar, it’s better; otherwise, get a container that can be used in the freezer, and crush the biscuits on the bottom. Lay a layer of ice cream, then one of cookies and one of ice cream.
Place in the freezer so that everything can thicken.
Remove it from freezer half an hour before serving and cut it with a little heart mould 🙂
Happy Valentine’s Day to you all!
