Chocolate Truffles


Here’s another sweet for Valentine’s Day (okay, I promise I stop here with sweets, next recipe will be for the original goulash :-).

I took the idea from the book ‘The vegan table’ which in my opinion is fantastic! In the book you find vegan dishes for parties, special occasions and “theme” dinners (such as nostalgic dinner, cinema dinner etc..), with full menus, and beautiful pictures. I already tried so many recipes and they all came out excellent.

To be honest, I wasn’t confident with this recipe, as I don’t like soy flavour that much (except for some things like i.e. tofu). And the main ingredient here is the vegan spreadable cheese, which is made of soy. But the result was excellent. These truffles were prepared for Christmas, then offered to non-vegan guests and nobody, really nobody, was aware of something particular. Indeed, the truffles were polished off in a second. And the soy flavour was gone! Hurrah! :-). They’re great and, if not too cold, also creamy inside.

110 gr of vegan cream cheese (I got Sheese)
150 sugar cane (yep, it’s not a little, but truffles are sweet enough. If you wish, you can certainly reduce the amount, just keep on tasting to get the right taste)
200 gr of dark vegan chocolate
1/2 teaspoon of vanilla extract
to roll the truffles: hazelnuts, ground almonds, cocoa or carob powder, flaked coconut, coloured sugar.

Process the creamy cheese with a food processor until gets very creamy. Add sugar gradually, then melted chocolate (melted in a bain-marie) and vanilla and mix everything well. Cover, place it in the fidge for at least 1 hour, or better overnight. The more the mixture rests in the fridge, the easier is to shape the truffles.
Shape the mixture into balls (2.5 cm in diameter). Place them in the fridge again if they’re too soft, i.e. if it’s too hot in the kitchen.
Finally, roll them in hazelnuts, cocoa, coloured sugar or coconut flour.
With these quantities you’ll get 25-30 truffles.
