Gluten Free Chocolate Salami
This recipe was born a bit by chance, to use some gluten-free cookies that haven’t got that much success in my family … but so transformed they did have a very short life! 🙂
Ingredients:
200 gr of vegan gluten-free cookies (or other vegan cookies to your taste)
100 gr of unsweetened cocoa powder
150 ml of agave juice
60 gr of margarine
a few tablespoons soy milk, if necessary
Method:
Easy: crumble the cookies without powdering them (so that you’ll see the pieces in the slice) and place them on a plate. In a saucepan, melt margarine, add agave juice plus one or two tablespoons of soy milk. Slowly combine this liquid mixture to the cocoa powder, to get a fairly smooth paste, which will be combined to the crumbled cookies. Pour the mixture on a sheet of aluminum foil and shape it into a “sausage” … followed by a vigorous licking to your fingers! Close it properly and store it in freezer until … you can resist! I was amazed by its consistency, although just removed from the freezer it was still soft; and its taste, barely sweet, but not too much, so you can feel the bitterness of the chocolate. In fact, I am proud of my improvisation! I hope you’ll enjoy it too! 🙂
