Black Beans Soup
A “poor” dish but with great personality!
Ingredients:
blacks beans, soaked in water at least 12 hours
red onion
2 bay leaves
1 fresh chilli
3 tomatoes
ground cinnamon
vegetable broth
extra virgin olive oil
Method:
In a pressure cooker heat the oil with bay leaves and chili (if it is not too strong you could also dare to add it chopped rather than whole), add the chopped onion and let it cook a few minutes.
Add cinnamon powder (about half a teaspoon) and tomatoes.
After a few minutes add also the beans and cover them with hot broth.
Close the pressure cooker and calculate 20 minutes from the whistle.
Accompany the soup with Raidnevegan.blogspot.com’s corn chips (mine haven’t come out as beautiful as hers but they were still very crispy and tasty!).

That’s super!!! I love it. I’ve been in Mexico many years ago, and reading your recipe I could remember the flavour of the soups I usde to have there. Also, they use cilantro (which I think it’s coriander)
