Fennel Risotto

I love risotto and when I saw this one with fennel on the web I tried it immediately.
And it’s officially one of my favorite dishes!

Ingredients:
100 gr of rice
1/2 large fennel
1 slice of onion
1 teaspoon of oil
hot vegetable stock

Method:
Heat the broth and, in the meantime, wash the fennel and cut into small pieces.
Chop the onion and fry it in oil.
When it gets transparent, add the fennel and stir.
Add a ladle of broth and let it stew a few minutes, until the broth has dried.
Then, add the rice and stir. Add the broth a little bit at a time, until the rice is done, stirring frequently.
If you wish, you can also add nutritional yeast flakes or vegan parmesan.
