Fragrant Cookies
I pop my head here sometimes, on the sly as usual! Today I invite you all for a snack … ๐ I’m enjoying these cookies right now, straight from the oven, what an aroma ๐
They’re tasty, easy, quick to do and light as well, I’d say! I’ve been dieting since the beginning of February, eating as usual but trying to control myself, especially with cakes …
Ingredients:
200gr of flour (I used a mixture of wheat flour, 00 flour, millet flour and barley flour)
50gr of rice flour (I didn’t have it today, I used potato starch, it’s the same!)
50gr of oil
60gr of brown sugar
80gr of soy milk
1 tablespoon of malt
lemon and orange zest
cinnamon
a pinch of salt
baking powder
Method:
Mix all the ingredients, first the dry ones, and then add the milk, slowly, mixed with oil and malt.
Form a ball and roll it out, pretty thick, about 1 cm. Cut out the biscuits with a cookie mould or with your hands.
I rolled out about a quarter of dough with chocolate chips: I mean, I rolled the dough out as usual, I poured over some chocolate chips, I folded it and rolled it out again.
Then, preheat the oven to 180ยฐC and bake ’em for about 8-10 minutes.
While they’re cooling you can prepare your favorite herbal tea and… Enjoy your snack! ๐

I very much like these cookies, you can taste the aroma of orange and lemon and a little of cinnamon (I put a little of it, to avoid it prevailing), they’ve a spongy texture, they’re gorgeous and dunkable!
As soon as I’ll have time I’d like to try some variations, for example with soy yogurt and other additions, beside chocolate chips… my favourite ones are with nuts, but because of the diet I didn’t use them… ๐
Unfortunately, it’s still a period of exams… so much stress and tiredness! These days I can’t even comment on your recipes, unfortunately… a big welcome to all the new chefs and a big “thanks” to the “old” chefs, for their new and fantastic recipes! ๐
