Yogurt Cheesecake

Hola compañeros de comida! In the new flat where I live there’s no oven! You’ll understana that this is a drama for me… can’t make freshly baked cakes, pies, cookies, muffins …  so, to redress it, I’m learning how to make a lot of cakes whitout the oven, and I finally tried the famous cheesecake! Also because here I find the spreadable vegan cheese! I wanted to share my joy with you… this is the recipe.

Ingredients:
for the base:
200 gr of digestive biscuits (vegan)
100 gr of soy butter
2 tablespoons of ground cinnamon
for the filling:
340 gr of vegan creamy cheese
140 grams of soy yogurt, strawberry flavoured
2 tablespoons of strawberry jam
5 tablespoons of powdered sugar
1 teaspoon of agar agar powder
soymilk as needed

Method:
First, let’s prepare the base, by reducing the biscuits to flour and mixing ’em with melted butter and cinnamon… flatten them carefully in one of those openable cake pans and place it in the fridge to set. Meanwhile, prepare the cream by combining the cheese with the icing sugar; whisk them well and add yogurt and jam… dissolve the agar agar in a little milk and boil it  for 1/2 minutes, add it to the cream, mix well and pour it on the base… let it cool in the fridge until ready to serve (at least 2 hours)… I garnished it with a strawberries syrup and and fresh strawberries!
I just placed in the fridge the  cheesecake I made with chocolate, if it comes out good I’ll post the recipe tomorrow.
It takes 5 minutes to prepare it… but you struggle until you can actually eat it!
Saturday I would like to take part to a competition of vegan tortilla de patatas  they do here, the prize is a wonderful super vegan cake … please help me! Have you got any advice not to taste too much the flavour of chickpea flour? Have you got any tricks for chickpea flour tortillas?

    this is just AMAZING!!! the photos are wonderful!!! for the chickpea flour tortilla: I soak the flour overnight, in or outside the fridge. Then maybe you may want to flavour it with pepper or other spices to “disguise” the flavour… you can also add a bit of soy butter to make the flavour more “gentle”
