Tasty Vegetables
After the overindulgences of the last few days (dinners with friends, lunches to finish the leftovers from the dinners, Valentine’s Day sweets, etc.) today I wanted something a little bit lighter and I must say that I very much liked these vegetables! 😛
Ingredients:
2 nice carrots
4 zucchini, small and tender
3 tablespoons of extra virgin olive oil
2 tablespoons of balsamic vinegar
1 teaspoon of caramel
thyme
salt
pepper
Method:
Brush (or peel) carrots, cut into strips, then boil them for two minutes. Drain and dry them. Wash, trim and cut the zucchini and then place the vegetables in a baking dish.
Prepare the sauce by mixing all the other ingredients (I prepared the caramel at moment – otherwise it solidifies – by melting a tablespoon of sugar with a teaspoon of water in a baine-marie and leaving it on the heat until it gets beautifully amber coloured).
Pour the sauce over the vegetables and mix well. Bake for twenty minutes until they start getting brown.

Excellent! I’d add more herbs (such as marjoran, orerano, rosemary), but this is delicious!
