Savoy Cabbage Rolls
There are many recipes of Savoy dumplings, mine is very simple and tasty, I have to say. The idea came from a dish that my mother cooked, very vegan: beans, barley and cabbage. So, here there are my rolls!
Ingredients:
4 large Savoy cabbage leaves
2 ladles of borlotti beans boiled
3 tablespoons of cereal flakes, mixed
1 onion
1 large carrot
1 teaspoon of turmeric
1 can of peeled tomatoes (mine are self-produced, it’s a tradition, and I don’t like the bought ones anymore!)
oil
salt
Method:
Wash the cabbage and steamcook it, you can also boil but I generally prefer to steamcook all the vegetables. In a saucepan, heat oil and fry the onion, sliced; then add the diced carrot, the boiled beans and the tablespoons of cereal flakes (if needed, add a bit of cooking water from the beans). Cook over a medium heat for 5 minutes, while everything gets flavoured; add the turmeric and salt. Let the mixture cool. In the meantime the leaves are done, not too soft, open them on a cutting board, divide the mixture into 4 parts, place them in the center of the leaf and roll. In a pan heat the oil with the onion, pour tomato and oregano, if you like, add salt and cook. Once the tomato sauce is done, lay the rolls over and leave them for 5 minutes, over a low heat. Extremely light and good!
Kisses to all!
