Tofu with Poppy Seeds

… on a bed of endive.
Today I tried out this recipe, taken from a magazine. I find it original and yet quick to prepare.

(serves 1)
half a loaf of tofu (about 125gr)
about 1/2 cup of flour
about 1/2 cup of poppy seeds
1/2 cup vegetable cream
1 pinch of turmeric or curry or saffron
1 endive
white balsamic vinegar

In 3 separate bowls, place flour, poppy seeds and cream (I used an oat based one for cooking) with a pinch of turmeric, or curry or saffron, to give a sort of egg-colour.
Cut the tofu in fairly thick slices, and season with salt. Then, pass each slice in flour, tapping it on the edge of bowl to remove the excess; dip tofu in the cream and then in poppy seeds.
Once done this with all the slices, brown them in oil or margarine on a medium heat for about 4 minutes each side. They should be golden.
Meanwhile, wash the endive, cut and dress it with olive oil, balsamic vinegar and salt.
Enjoy it!

This recipe, as well as being super quick, is also tasty, in fact tofu becomes very crispy and tasty. The original recipe calls also for the addition of chopped dill to the salad, but unfortunately I didn’t have it. These days I made several culinary discoveries, and beside poppy seeds that I had never used, I tried the rice and hazelnut milk, a really delicious drink, now I can’t do without it :-D!
