Pumpkin Pizzaiola
An unusual way to serve pumpkin. Preparede this way, even those who do not love this wonderful vegetable, will like it.
Ingredients:
(serves 2 very hungry :-D):
10 slices of pumpkin, about 1 cm thick
1 onion
1 or 2 cloves of garlic
1 jar of peeled tomatoes
extra virgin olive oil
white wine (optional)
a handful of olives, cut into rings
some capers
oregano
salt
pepper
flour
oil for frying
Method:
Salt the slices of pumpkin and let them drain a bit on a plate.
Meanwhile, cut the onion into thin slices and sauté it in a bit of extra virgin olive oil with the garlic cloves, cut into quarters. Pour in the white wine and, as soon as gets dry, add the tomatoes, mashed with a fork. Mix it with olives, capers and oregano, salt and pepper and cook in covered saucepan over a low heat.
Take the slices of pumpkin, pat dry, pass them in the flour and fry in hot oil for a few minutes. Drain on kitchen paper and then let them season for a few minutes in the sauce.

Well, I love pumpkin so I won’t “need” this “method” to have it… but seems so delicious that I’ll definitely give it a try!
This is cool! And the same preparation can be used for a lot of vegetables… a good way to make them eat to thos who don’t like vegetables.
