Cereal Pie
This pie was born from the idea not to dispose of the leftover cooked cereals. I had a bit of millet, after making patties, and oats and barley that I had used for a soup. Therefore I tried to make this pie and, I must say, it was really good.
Ingredients:
millet, oats and barley, boiled
2 tablespoons of nutritional yeast flakes
2 tablespoons of spelt breadcrumbs
sea salt
extra virgin olive oil
Method:
I placed the cereals in a bowl and I seasoned with a little salt, nutritional yeast flakes and one or two tablespoons of breadcrumbs. I blended well and then I laid the mixture on a baking pan, lightly oiled. I made a thin layer, flattening it well and then I dusted the surface with the remaining bread crumbs crumbs and a dribble of oil. Bake at 180 degrees until gets golden brown. I had it with raw grated carrots.

Well, this is a great idea. I’d also add some sundried tomatoes and spices to give it a more “mediterranean” flavour
I like this way to recycle cereals! I don’t cook them that much as I don’t have a lot of leftovers, anyway it’s really smart 🙂
