Potatoes and Artichokes
A dish of my childhood, one of my absolute favorites, an amazing and simple goodness, this recipe comes from my grandmother, Marina, whom I love so much!
Ingredients:
10 artichokes
4 medium potatoes
1 white onion
parsley
6 tablespoons extra virgin olive oil
salt
Method:
Clean the artichokes, cut into quarters and place them in water, acidulated with lemon.
Peel the potatoes, cut into pieces of similar size to that of the artichokes, and place them in a bowl with water.
In a saucepan, pour the oil, the chopped onion, the drained artichokes and potatoes, and fry over a moderate heat for 10 minutes; add parsley and salt and cook over a low heat with a lid without stirring, adding a very little water to prevent it sticking. When the artichokes can be cut with a wooden spoon the dish is ready to be enjoyed, hot … you’ll burn your fingers but it’s worth it!

It’s a cuddle-dish, you choose the doses, equal amounts of potatoes and artichokes, but if you prefer one or the other, my grandmother allows you to transgress the recipe!
I made my first steps into the kitchen with her, I realize that most of my favorite dishes are connected to my beloved grandmother and then to my childhood, and when I prepare them I feel really pampered.

Seems very good and “cuddling”… I hate cleaning artichokes though 🙂 but if i feel like cleaning I think this is definitely worth doing!
