Almonds and Orange Cake

3/4 oranges
350 grams of flour (I used a flour mix for cakes)
50 gr of cornstarch
100 gr of brown sugar
100 gr of almonds
1 tablespoon extra virgin olive oil
a pinch of salt
16 gr of cream of tartar
icing sugar for garnish

First of all, I squeezed oranges and combined their pulp and juice with a tablespoon of extra virgin olive oil.
I sifted the flour into a bowl and I combined all the dry ingredients, except for the almonds; then I added the orange/olive oil mixture with an electric whisk. Only at the end I added the almonds, previously coarsely chopped and toasted.
I greased a pan with soy butter and sprinkled it with flour. I baked the cake for about 30 minutes at 180 degrees.
And voila, a dusting of icing sugar and it’s ready to be enjoyed 🙂
Uhmm, very spongy… we have just had it as an after dinner sweet 😀

    Can’t imagine the taste of orange + almonds, generally I don’t like orange in cakes, but maybe combined with almonds changes a bit.
