Prune Cookies
For several days I have been watching a bowl of prunes, discarded from a selection of dried fruits, which languished in the kitchen without any hope of being eaten … this morning I took the initiative and gave them a sense! 😀
Ingredients:
220 gr of all purpose flour
100 gr of sugar
100 gr of soy butter
1/2 cup soy milk
9 gr of baking powder
1 teaspoon of vanilla powder
1 teaspoon of ground ginger
1 pinch of salt

Method:
I cut the prunes into small pieces and removed all the stones, then I mixed all the ingredients and let the dough rest in the fridge for an hour …
I shaped the dough in flat pellets and arranged them on a baking sheet, lined with baking paper. I baked them at 180°C for 25 minutes.
The cookies are slightly soft and fragrant! 🙂
