Sweet and Sour Chickpeas

Quick and easy is my motto in the kitchen!

Ingredients:
200 gr of chickpeas
50 gr of raisins
50 gr of pine nuts
extra virgin olive oil
balsamic vinegar
salt
pepper

Method:
Soak the chickpeas overnight. The next day, rinse and boil them in water. How long it’s up to you and also depends on the quality of chickpeas.
I like chickpeas well cooked, but also that they remain “detached” with each other: therefore I toss them in very cold water at the last minute.
Meanwhile, I soaked some raisins in water and toasted some pine nuts.
In a pan, I saut√© all of them adding oil, salt and pepper; if you like it a bit caramelized, just put a little balsamic vinegar too, or use it as a decoration… The dish is ready!
