Apple and Yogurt Cake


Born as I wanted to use the beautiful Fuji apples which are now in season ­čÖé

300 gr of all purpose flour
200 gr of sugar
2 tablespoons of potato starch or cornstarch
4 tablespoons of water
250 gr of unflavoured soy yogurt (or the flavour you prefer)
3 large apples or 4/5 if tiny
14 gr of baking powder
100 ml of sunflower oil
1/2 lemon juice

Peel and cut apples into chunks and put them in a bowl, sprinkled with lemon juice and covered with a cling film to minimize their blackening.
In a glass combine 2 tablespoons of potato starch with 4 tablespoons of water, to create our thickener and not to disturb the hens. Add “the egg starch” to the sugar in a bowl and stir to combine them well, then add yogurt and oil.
Now add the flour and the baking powder, sifting to avoid lumps. Eventually add the apples. Grease a cake mould with a ring shape with a bit of oil and pour the mixture into.
Bake at 180┬░C in preheated oven for 45-50 minutes.
The inside of the cake remains moist, there are apples, but the time is more than enough to bake it. Therefore, when carrying out the “toothpick test”, don’t panic if you think that the cake’s not done yet! It’s delicious, and you may want to sprinkle it with icing sugar for an additional elegant touch!
