Bulgur with Vegetables
This dish is excellent cold as well: ideal as a lunch-box!
Ingredients:
140 gr of bulgur
1 red pepper
1 green zucchini
1 onion
10 gr of organic tomato paste
1 bay leaf
1 organic vegetable stock cube
extra virgin olive oil
basil flavored oil
Method:
Boil the bulgur, and place the bay leaf in the cooking water, slightly salted. Meanwhile, chop the onion and sautee it in a wok with a little extra-virgin olive oil. While the onion is cooking, cut the pepper and add it to the wok. After 5 minutes add zucchini, stock cube and tomato paste. Let it cook for 10 minutes and combine it with bulgur. Serve warm with a drizzle of basil flavoured oil .
